Roasted Potato Salad

About a week ago my neighbors brought us over some roasted potato salad. 


It changed my life.


Seriously!!!


Ok...so maybe it didn't change my life, but it would have if it was possible for a food dish to change your life. 


The next night I took them back a pan of the Orzo pasta salad that I posted the recipe for in my last post.  I got the recipe for the potato salad from them, and couldn't wait to give it a try.  It's one of the easiest recipes, but oh my goodness, in the name of all that is true and good...it is absolutely DELICIOUS!



Ingredients:
6 or 7 red potatoes (cut into small wedges)
Olive oil (to coat)
2 Tbsp Italian seasoning
 1 tsp Garlic Salt
salt and pepper (to taste)
1 c. shredded cheddar cheese
1/4 c bacon bits
1/2 c Ranch dressing



Cut potatoes into small pieces and drizzle with olive oil.


Sprinkle with garlic salt, pepper, Italian seasoning.

Bake for 20-25 minutes; until slightly tender, and flip potatoes.

Continue baking for an additional 15-20 minutes until potatoes are easy to cut with a fork.



Drain excess oil and put potatoes in a large mixing bowl.



Add shredded cheese, bacon bits, and ranch dressing.  Mix.



And there you have it folks...

Roasted Potato Salad in all it's mouthwatering deliciousness!!!

  2. I do! We are talking about doing a cooking club on our street, so that we can all get together once a month, hang out, and eat good food.
