Muffin Melts and a perm

Chris went to mow at his mom's house yesterday evening, so I decided to watch TV.  When I turned the TV on I noticed the Bengals game was getting ready to start.  Anyone who knows my husband knows how big of a Bengals fan he is, so when I saw it on, I was shocked that he had elected to mow instead of being home to watch the game.  So, as any good wife would do - without even being asked I might add, I watched the game and was texting him play-by-play details of the game.  I love going to live games.  Even if your not a big football fan you can't help but get into it when you are subjected to the atmosphere of a football stadium filled with screaming fans.  But I often fall asleep when Chris has them on at home.  It's just not the same kind of experience.  Last night was a whole new experience though.  Maybe because I was 'into' it so I could tell him what was going on...I'm not quite sure.  But I found myself really enjoying it. And it was just a PRE-SEASON game.

Yesterday day, I hit up some yard sales with my good friend, Starla.  The initial plan was for her to come over and help me make up some freezable meals.  We looked at the cookbooks, but opted to hit yard sales instead.  Good idea.  I found Breanna a Fisher-Price Spark Art Easel with accessories for $15.  Starla is a yard sale queen, so when Breanna started playing with it I asked Starla if it was a good deal.  She said, "I think so." So I got it.  This morning I Googled it and saw that the easel with accessories goes for $199.  STEAL!!!  I was telling Chris about it, and laughed when he suggested I start going to them every week.  Um, OK honey, let me add that to my to-do list of doctor's appointments, cooking enough meals for you and the kids to eat while I'm out for the count, surgery itself, and recovery.  

I've been trying out recipes this week that are freezable to see if him and the kids like them before I go about making several batches up.  This morning I made English Muffin Melts for breakfast, and they were delicious. I was too busy cooking (because I was starving) to take pictures, but it's a really easy recipe.

8 hard boiled eggs
1 cup shredded cheese (I used mozzarella, but cheddar or any other kind would be good)
1/2 cup mayo
12 pieces bacon, cooked and crumbled
1 tsp Dijon mustard
sprinkle garlic powder
1-2 tsp Worcestershire 

Mix all ingredients, then fold in diced up boiled eggs.  Cut English muffins in half.  Spread mixture on each half, and top with a little extra cheese.  Place on cookie sheet and broil for 3-5 minutes.  until cheese is nice and melted.  To make ahead, place mixture on the English Muffin, put on cookie sheet and wrap with aluminum foil.  Can be made several days in advance.

Chris said they taste JUST LIKE  McDonald's muffins, and to definitely make them to freeze.

Today, I got a perm.  I went to Angie because I was feeling the urge to chop it short again, and I told her to give me something easy.  I know when I start feeling bad the last thing I'm going to want to do is worry about my hair.  So, she gave me a perm.  When I got home Kinsey runs to the car from the neighbors and says, "Oh, mommy, I love your hair...it's BEAUTIFUL!"  So, I guess it looks pretty good.

  1. We needed to get you out of that house! Thats great that it was a good deal but I still think you could have gotten it for $10. I love yard sales.
