Beef Drip

I'm a little emotional today; I guess that is to be expected the day after you find out you have cancer.  I don't have the words to express what I'm feeling, so if you could just please take a few minutes to pray for my family.  Tomorrow and Friday are going to be tough.  Physically and mentally.


Since I really have no words today, I'm just going to post a recipe that I've got a lot of requests for.


It is a favorite of Chris's.


And it's SO incredibly easy to make, and I serve it with fried potatoes.



Doesn't that just look scrumptious?!



Place chuck roast in crock pot



Add beef broth, onions, green peppers, pepperocini's, salt, pepper, and Italian seasoning.  Walk away and let the crock pot do it's work.



When you return 6 hrs later, and remove the lid....THIS is what you will see.



Remove meat and start pulling apart using two forks...or if you are brave - your fingers work well too.



Butter and place bread on pan.  Place under broiler until edges are a nice golden brown.



Top with meat and additional onions, green peppers, and pepperocini's and top with cheese.  Place back under broiler until cheese is melted.



YUUUUMMMMMMMMMM!!!!!!!!

Scope out some juices from the crock and add a little Worcestershire for a tasty dipping sauce.

Serve with your choice of sides.
